West African Peanut Soup

Ingredients

2 cups chopped onions
1 tbsp oil (just for frying)
1/2 tsp cayenne
1 tsp grated peeled fresh ginger root
1 cup chopped carrots
2 cups chopped sweet potatoes
4 cups water
2 cups tomato juice
1 cup smooth peanut butter
1 cup chopped chives

Method

Saute the onions until they are translucent.

Add the cayenne and ginger, fry for 1 minute.

Add the carrots and fry for 2-3 more minutes.

Put fried stuff, sweet potatoes, water, tomato juice into pot.

Bring to boil, then simmer for 15 minutes, or until everything's cooked.

Puree this mixture in a blender or similar. Stir in peanut butter, until all the peanut butter is mixed.

The soup will have a smooth and thick consistency. Reheat soup over low heat, stirring continously (should take only a couple minutes).
