Vegetarian Savoury Pie
A nice solid savoury pie recipe for vegetarians, something to base other vegetables around.
6 oz. of haricot beans
8 oz. of onions
1 lb. of tomatoes
8 oz. of parboiled potatoes
2 hard-boiled eggs
1 tspn of herbs
4 oz. of butter
8 oz. of wholemeal flour
pepper and salt to taste.
Soak and cook the haricot beans beforehand, this can be an overnight soaking. Follow the instructions on the packet.
Place the haricot beans in a pie-dish, chop up the onions and boil them in a little water until soft.
Cut the potatoes in small dice, slice the tomatoes, cut up the eggs, and mix all the ingredients thoroughly in the pie dish, adding the herbs, 1 oz. of butter, and seasoning.
Pour over the mixture 1 pint of water, and let it cook for 1 hour in the oven. Make a paste of the wheatmeal or wholemeal flour, the rest of the butter and a little cold water
Cover the vegetables with the pastry, and bake the pie 1 hour in a moderate oven.

If bought dried, must be soaked and cooked prior to use to remove toxins. Haricot beans are also sometimes known as navy beans because of their extensive use at sea by the British Navy.
Dried haricot beans must be soaked in water for at least 5 hours and then drained. Place the beans in a saucepan and cover with water, boil vigourously for 10-12 minutes.
They can then be used in other recipes. If being served as a vegetable dish on their own, they'll need to be simmered for another 1 to 1.5 hours until tender.
