This is good over roasted veggies stuffed into a pita. It would also be good as a dressing on a potato and roasted vegetable salad.
Ingredients
1 large cucumber
1 cup plain nonfat yogurt
1 teaspoon apple cider vinegar
1 pinch salt
1 teaspoon dried dill
4 large cloves garlic, minced
Method
Peel, seed, grate and squeeze the cucumber dry.
Combine with remaining ingredients and allow to stand for 20 minutes at room temperature, stirring occasionally.
Hints
Be careful with the amount of garlic.
