Super Soup

Servings : Loads; freeze some 
Preparation Time : Ages, put the radio on 
Difficulty : Easy 

Big pan, super soup for cold winters, tight budgets and heart warming meals.

Ingredients

3 medium potatoes
1 large carrot
1 medium onion
1/2 celery stalk
spinach, one large bunch or several small bunches
3 cubes vegetable boullion
16-24oz tomato paste
28oz kidney beans, canned
16oz white beans, canned
16oz corn, canned
1lb barley, dry
salt, pepper to taste

Method

Bring fluid to a calm boil, simmer for 30-45 minutes. Add more water as necessary.

While these ingredients cook, open the cans of beans and corn, rinse well.

Rinse the barley too.

When potatoes and carrots are cooked, add the beans, tomato paste, corn, barley, and several cups of water.

Stir GENTLY until the tomato paste dissolves. Return to the boil and simmer for about 1 hour, until the barley is tender.

Add water as necessary.

Serve with your favourite soup bread.

When refrigerated, the soup will thicken, add additional water for reheating.
