Stir Fried Peas with Lentil Sprouts & Leeks

Easy veggie dish, serve with a little rice and any from a range of side / dipping sauces
Ingredients
1 onion, thinly sliced
2 garlic cloves, peeled and cut into very thin slices
4 tbsp oil
1/2 lb fresh peas (mange tout, snow peas, etc) topped and tailed
2 leeks, split, washed, cut into strips
1/2 cup lentil sprouts
Seasoning
1 tbsp chopped coriander
Method
Lightly fry the onion and garlic in the oil for about 3 minutes. Use either a wok or a large deep frying pan, as you will need room for the other ingredients.
Add the peas and leeks and stir-fry for another 4-5 minutes.
Add the lentil sprouts, seasoning to taste and coriander and continue stir-frying for a further 3 minutes.
Serve hot with a good soy sauce or a peanut sauce and a little rice.
Hints
I've found sourcing lentil sprouts often difficult, but I've written the recipe as I jotted it down years ago. What I most often do is soak and part cook dried split lentils instead and add those; follow the packets cooking instructions.
