A very simple and reasonably healthy rice dish suitable for veggies everywhere.
1.5 pints of vegetable stock
herbs and seasoning
1.5 cups of rice
Fry the onions and tomatoes in butter until well browned, then place them with the seasoning into the cold vegetable stock, add the rice.
Bring to the boil and allow to simmer slowly for 20 minutes, the rice should have absorbed the stock.
Serve with a grated cheese sprinkled over the top of this simple rice dish.
