Slow Cooker Sweet & Sour Quorn
Not a perfect sweet and sour, but about as easy and simple as you can get. Serve with rice.
1.25 tbsp olive oil
1 red pepper, de-seeded and cut into strips
1 carrot, peeled and cut into strips
1 large onion, sliced
4 inch of cucumber, cut in strips
1 stalk celery, chopped
450g packet of quorn pieces
14oz can of pineapple pieces in natural juice
2.5 tbsp soya sauce
2.5 tsp tomato paste
1.5 tbsp wine vinegar
2.5 tsp of cornstarch
0.25 pt vegetable stock
Salt and pepper to taste
Lightly fry the onion until softened, 3-4 minutes, add to the slow cooker.
Seal the quorn pieces in the same pan, where they’ll pick up some of the onion flavours. Add to the pot.
Mix the cornstarch with a little of the vegetable stock.
Add everything else to the pot. Then add the cornstarch last and stir through.
Cook on slow heat, needs to be one hour after it's come up to a simmer.
I tend to just set it cooking in the morning on the lowest setting, then call it done at tea time.
