Quorn Tikka Masala

The ever popular Tikka Masala using Quorn pieces to make this a wonderful veggie recipe.
350g Quorn pieces
15ml (1 tbsp) vegetable oil
2 medium onions (peeled and roughly chopped)
60ml (4 tbsp) tikka paste
Basmati rice – 300g uncooked rice weight
284ml (1/2 pint) vegetable stock
60lm (4 tbsp) virtually fat free yoghurt (add more if you would like a thicker/creamier sauce)
15ml (1 tbsp) fresh coriander (chopped)
Heat the oil in a heavy based saucepan. Fry the onion and tikka paste together for 4 minutes, stirring constantly.
Cook the rice following pack cooking instructions.
Stir in the vegetable stock, bring to the boil, reduce the heat and simmer, uncovered for 5 minutes. Remove from the pan and purée to a smooth paste.
Return the purée to the pan, bring to the boil and add the Quorn pieces. Simmer, uncovered for 8 minutes.
Stir in the yoghurt and coriander. Warm through.
Serve with basmati rice.
