Quorn Chili Con Carne
Very simple chilli recipe using Quorn as the meat substitute.
1 (300 g) packet of Quorn mince
1 chopped onion
1 chopped bell pepper
1 (300 g) can of rinsed kidney beans
1 (400 g) can of chopped tomatoes
2 carrots, quartered and sliced
Chilli powder (to taste)
2 tbsp. of olive oil
Salt & pepper
Sauté the chopped onion, and chopped bell pepper and the sliced and quartered carrots in olive oil for several minutes.
Add the pack of Quorn Mince and then sauté for a several more minutes. Stir well.
Then add in the kidney beans, chopped tomatoes, salt, pepper and chilli powder to taste.
How much chilli depends on its strength and your taste buds. You can always add a little more in later stages. I find 2 teaspoons makes a reasonably hot chilli.
Bring this to the boil while stirring regularly, cover and simmer approx. 20-30 minutes.
Next this can be served with a large portion of boiled rice - Basmati!!
