350g Quorn mince
Low calorie cooking spray
2 garlic cloves
2 x 400g cans chopped tomatoes
30ml (2 tbsp) chopped fresh basil
30ml (2 tbsp) chopped fresh parsley
15ml (1 tbsp) grated lemon rind
30ml (2 tbsp) sugar
30ml (2 tbsp) tomato purée
Salt and pepper
340g dried spaghetti Grated Parmesan cheese to serve (optional)
Generously spray a frying pan with low calorie cooking spray and fry the Quorn mince and crushed garlic for 5 minutes, if the mince starts to burn add a little water.
Add the tomatoes, half the chopped fresh basil, the parsley, lemon rind, sugar and tomato purée.
Season well, then bring to the boil; cover and simmer for a further 15 minutes. Stir in the remaining basil.
Meanwhile, bring a large pan of salted water to the boil. Add the spaghetti and return to the boil.
Simmer for 10-12 minutes or until the pasta is just done.
Drain well and serve topped with the bolognese sauce and sprinkled with grated Parmesan cheese * (if using).
* Traditional Parmesan is not exactly a vegetarian cheese, there are though a limited number of alternatives.
