Ingredients
1.5 lbs. of potatoes
3 hard-boiled eggs
1 small beetroot

Method
Boil the potatoes until tender.
Mash them thoroughly with a potato masher. And then the secret to the 'snow'.
Pass the mashed potato through a seive, into an already hot dish, letting the mashed potato fall lightly, and piling it up high. In this way air is added to the mix making it lighter.
Slice the eggs and beetroot, and arrange alternate slices of egg and beetroot round the base of the potato snow.
Brown the top under the grill.
