Pasta Shells Florentine

There are so many pasta dishes open to vegetarians and this is one of my preferred recipes.
Ingredients
10 ounces chopped spinach, thawed and drained
4 ounces mozzarella cheese, shredded
1 cup cottage cheese
1 egg white
1 tablespoon grated Parmesan cheese *
1/4 teaspoon ground nutmeg
16 jumbo pasta shells
14 ounces spaghetti sauce
Method
Heat the oven to 375 F.
Cook and drain the jumbo pasta shells according to the packets instructions.
Mix the spinach, mozzarella cheese, cottage cheese, egg white, Parmesan cheese and nutmeg until well blended.
Fill each shell with a heaped tablespoon of the spinach mixture.
Place in 12 x 8-inch baking dish; spoon the spaghetti sauce over the filled jumbo pasta shells.
Cover with baking foil and bake for 30 to 40 minutes or until thoroughly heated.
Hints
* Traditional Parmesan is not exactly a vegetarian cheese, there are though a limited number of alternatives.
