Tomato and mushroom dish, served cold with crusty wholemeal bread rolls.
1 lb tomatoes, skinned, seeded and chopped
2/3 cup red wine
2 tbsp tomato paste
Pinch ground ginger
2 spring onions, chopped
1 garlic clove, peeled and chopped fine
2 tbsp raisins
1/2 lb button mushrooms
Add the chopped tomatoes, red wine, tomato paste, ginger, garlic and seasoning to a pan and simmer for 6-8 minutes.
Add the spring onions, mushrooms and raisons to the pan, cover and simmer for another 5 minutes.
Allow to cool and then chill thoroughly. Serve with crusty wholemeal bread rolls.
