Microwave Quorn Curry

About as easy as a microwave curry can be.


2 carrots, peeled and chopped
1 large onion, chopped
2 tbsp butter
0.25 cup plain flour
4-5 tsp medium curry powder
1 packet quorn pieces
1.75 cups boiling vegetable stock
1.25 cups shredded coconut
0.25 cup sultanas
1 eating apple, peeled, cored and chopped
1 peach, peeled, stoned and chopped
2 tbsp tomato paste
2.5 tbsp lemon juice
Salt and pepper to taste


Warm a large dish, if youíre warming in the microwave, leave the lid off, and probably about 3 mins on full power.

Add the carrots, onion and butter to the dish, place on lid and microwave for 2 mins

Stir in the curry powder and quorn pieces. Microwave on full power for 4 mins.

Gradually stir in the vegetable stock, stir continually. Then add everything else.

Cover and microwave on full power for minutes.

Stir well.

Turn down the microwave to a simmer or defrost setting, microwave for 30-35 mins, stirring two or three times.

Allow to rest for 1 minute and serve with rice.


To sauce the curry up a little, you can separate about a quarter of it, minus the quorn pieces, and liquidise, then add back to the curry.
