A macaroni cheese recipe that works well for me. Another good vegetarian recipe with pasta at the core.
6 oz elbow macaroni
3 tblsp butter or margarine
1/4 cup finely chopped onion
2 tblsp all-purpose flour
1/2 teaspoon salt
2 cups milk
2 cups cubed cheese
1 medium tomato, sliced
Preheat the oven 350 degrees.
Cook macaroni according to packet instructions and drain.
For the cheese sauce; melt butter or margarine in a pan, cook the onion in the butter until tender but not brown.
Stir in the flour, salt, and pepper.
Add the milk a little at a time, stirrng continuously. Cook and stir until thickened and bubbly.
Cook and stir for 1 to 2 minutes more. Add the cubed cheese, stir till melted.
Stir macaroni into cheese sauce. Turn into a casserole dish. Arrange the tomato slices on top of the macaroni
Sprinkle with a little salt.
Bake in a 350 degree oven 30 to 35 minutes or till heated through.
