Macaroni and Cheese
A near perfect macaroni cheese recipe for vegetarians.
1 1/2 cups macaroni
1/4 cup butter or margarine
1 small onion - chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup flour
1 3/4 cups milk
8 ounces cheese, cut into 1/2inch cubes
Cook the macaroni as directed on the packet, try using elbow macaroni, rigatoni, or spinach egg noodles for better results.
Cook and stir the margarine, onion, salt and pepper over a medium heat until the onion is slightly tender. Blend in the flour.
Now cook over a low heat, stirring constantly, until mixture is both smooth and bubbly; remove from the heat.
Stir in the milk, heat to boiling, stirring constantly. Boil and stir for one minute; remove from heat.
Stir in the cheese until melted.
Place macaroni in ungreased 1 1/2-quart casserole. Stir cheese sauce into macaroni.
Cook uncovered in 375 F oven 30 minutes.
