Enchiladas

Make Mexican enchiladas for the whole family

Ingredients

Pack of Quorn or Soya mince
Chili sauce (ASDA's own make jars)
Frozen mixed veg
Pack of grated mozzarella cheese
Slightly salted nachos
4 tortilla wraps
Frylight

Method

Spray a couple of sprays of frylight into a pan and heat gently

Add the mince and mixed veg and cook until mince is browned and veg is soft

Add the chilli sauce and stir in until hot

Meanwhile heat the tortillas in the microwave for 15 seconds

Spoon out a spoon of the mixture onto each tortilla with a sprinkle of cheese in each and wrap like a fajita

Spray a baking dish with frylight and place the filled tortillas side by side

Pour over the remainder of the mince

Here’s the twist, crunch up the nachos and sprinkle a layer over the whole dish then add a layer of cheese on top

Place into an already heated over and leave for about 15 to 20 mins until the cheese is golden brown

Serve with nachos or salad

Serves 4 (one enchilada each.... may not sound much but it's like a spicy lasagne!)
