Wild Rice & Egg Scramble

Tasty rice dish to accompany other oriental or Asian main meals

Ingredients

0.75 cup wild or brown rice, cooked
1 tbsp butter
1 onion, thinly sliced
2 tbsp olive oil
3 eggs
0.5 tsp mixed herbs
Seasoning

Chopped parsley to garnish

Method

Melt the butter and add the rice, heat through thoroughly.

In a separate pan, fry the onion gently in the olive oil for 3-4 minutes.

Beat the eggs with the mixed herbs, salt and pepper to taste and about 1 tablespoon of water. Add the beaten egg mixture to the onion and scramble slightly.

Combine the hot rice and scrambled egg and onion, and serve immediately; doesn’t reheat too well.
