Spring Roll Wrappers

Easy pastry to make up your own spring rolls. ther method is easy, as are the ingredients, but there is a long chilling time, so you need to pan ahead.
1 cup all purpose flour
1 egg, beaten
Little cold water
Sift the flour into a bowl, make a well in the centre and add the beaten egg and a little cold water.
Mix to a soft yet firm dough. Add a little extra water in necessary.
Knead the dough until it is really pliable, this helps the gluten work.
Cover and chill for about 4 hours. Then allow to come back to room temperature.
Roll out the dough on a well-floured surface, about 0.25 inch thick. Cut into 12 equal pieces.
Roll each piece to a square about 6x6 inches or 15x15 cm, each square should be very thin.
They're now ready to add your preferred filling, seal with a little beaten egg.
