Spicy Lentil Soup
Spicy lentil soup recipe, making a nice thick soup.
1 tbsp olive oil
2 crushed garlic cloves
1 large chopped onion
1in / 2.5cm piece of fresh root ginger, peeled and grated
1 chopped parsnip
1 chopped large potato
2 chopped sticks of celery
2 tbsp medium curry powder
100g red lentils
1.5 litres vegetable stock
400g canned coconut milk
1/2 lemon - grated zest and juice
15g chopped coriander
salt and pepper to season
Gently fry the garlic, onion and ginger for two to three minutes.
Add the parsnip, potato and celery and continue frying for another three minutes.
Stir in the curry paste through the vegetables and fry for another minute.
Add the lentils and stock to the pan. Bring to the boil, reduce the heat, cover and simmer until the lentils are tender - about 25 minutes.
Pour the mix into a blender or food processor, liquidise until smooth. Pour back into the pan, add the remaining ingredients, with the seasoning to taste and heat through before serving.
