Perfect Sag Aloo to accompany a wide range of Indian dishes
500g (1lb) pack fresh spinach, or about 400g of frozen.
500g (11b) potatoes
2 cloves garlic
1 med onion, sliced
Peel the potatoes and cube into small pieces.
Add oil to pan and add mustard seeds. When they start to spit add the crushed garlic and sliced onion. Stir for about 5 minutes till transparent.
Add cubed potatoes stir for a minute or two.
Add spinach and 1tblsp water, salt and cayenne. Put lid on.
Cook till potatoes soft.
Check every now and then to ensure it does not dry out.
