||35 mins cooking time, few mins prep
Iíve had fennel from veg boxes in the past and been at a loss to know what to do with them, this is one of the recipes Iíve come across that works well, though Fennel is still something of an acquired taste.
4 heads of fennel
zest and juice of two lemons
2 tbsp olive oil
2 tsp cumin seeds
salt and pepper to taste
Trim the fennel and cut into quarters lengthways.
Grate the lemon zest and juice.
Preheat the oven to 200c. Place all the ingredients in an ovenproof dish and toss together well. Season to taste.
Roast for 35-40 minutes, until the fennel is golden and tender.
