Irish Soda Bread

Servings :
Preparation Time : 10 minutes, cooking 40 minutes
Difficulty : Easy

Super soft soda bread for veggies and anyone on an egg free diet. I make this to accompany many of my favourite veggie soup recipes.

Ingredients

450g plain flour
1 level teaspoon bicarbonate of soda
1/2 teaspoon salt
300ml buttermilk or sour milk (or realistically just milk)
1 tablespoon sunflower oil

Method

Sift the dry ingredients into a bowl. Make a well in the centre and pour in the buttermilk and the oil.

Stir the flour into the liquid to from a soft, but not sticky dough.

Immediately turn onto a floured baking sheet and shape into an uneven round.

Mark a cross on top of the soda bread with the handle of a wooden spoon.

Bake at 350F, 180C, gas mark 4 for 35-40 minutes, or until golden brown.
