Egg foo yung, to go with rice, side salads or alongside other oriental dishes.
Ingredients
6 eggs
1.5 tbsp soy sauce
3-4 onions, diced
Salt and pepper
Oil
1.5 cups bean sprouts
Method
Beat the eggs with the soy sauce until well mixed, stir in the onions and salt and pepper.
Stir fry the bean sprouts for 3-4 minutes.
Pour in the egg mix, leave on a medium heat to set. Switch to under the grill to brown the top .. or flip carefully if you can in the pan.
Cut into wedges and serve immediately with your other dishes.
Hints
For ease, you can stir like crazy and make it more scrambled than omelette.
