Deluxe Angel Food Cake

Difficulty : Moderate 

Very light angel cake

Ingredients

1 Cup flour
1 tsp cream of tartar
1 Cup granulated sugar
tsp salt
12 egg whites
1 Cup icing sugar
1 tsp vanilla extract
1 tsp almond extract

Method

reheat oven to 375F / 190C.

Lightly flour the cake tin

Beat the egg whites, cream of tartar and salt until it has become foamy. Add the granulated sugar and continue beating on high until firm peaks are formed.

Add the vanilla and almond extracts. Combine flour and icing sugar and fold in gently the mixture about 1 tablespoon at a time.

Spoon batter into the cake tin and bake for 30 - 35 minutes.

Allow to stand on an inverted plate or similar to allow air to get around the cake and cool then remove from tin.
