Chow Mein - Fried Noodles & Vegetables
Ever popular from the Chinese takeaway, you can try this wonderful vegetarian chow mein recipe at home.
Japanese noodles 500g
Celery, carrots, corn, broccoli, chinese cabbage, etc., 750g
Salt to taste
Chinese wine 2Tbsp
Soy sauce 2Tbsp
Sesame oil 5drops
Water approx. 3Tbsp
Oil approx. 2Tbsp
Fry the noodles according to the instructions on packet.
To cook the vegetables, fry the ginger in hot oil for about 20 seconds, add sliced vegetables and fry until they start to sweat.
Now add a little water, cover and cook on a high heat until the vegetables are just cooked (If a wok is available use stir-fry method)
Now add the cooked noodles, wine, shoyu or soy sauce, sesame oil, sugar and cook for about 5 minutes to combine all the flavours.
Variation: Tempeh or tofu goes well with noodles and vegetables.
Note 1: If you have a large pan or wok fry noodles and vegetables together.
Note 2: Ginger, sugar, soy sauce and wine, thickened with cornflour and water makes a good chinese style sauce.
Note 3: Try using dry sherry instead of chinese wine.
