Quick Lush Pilaf Rice

Ingredients

1 Onion, small diced
2 Carrots, quartered lengthways and then very thinly sliced
3 Garlic cloves, chopped
300g Basmati Rice
650ml Vegetable stock, heated
2 teaspoons Garam Masala
1 teaspoon Turmeric
2oz butter
2 tablespoons vegetable oil

Method

Melt the butter and oil in a largish pan that has a well-fitting lid.

Gently fry the onion for a few minutes, add the carrots and garlic for a few minutes more, stir well.

Add the rice and stirring well, fry for 2-3 minutes, then stir in the Garam Masala and the Turmeric.

Add the vegetable stock, add the lid and leave to cook for 12 minutes without removing the lid.

Once done, give it a good stir, the rice should be light and fluffy and all the stock absorbed.

Hints

You can spice the recipe up a little with some thinly sliced, deseeded fresh chillies; added with the Garlic.

You can also cook with brown rice, but you may need a little more stock, and will need to lengthen the cooking time; probably about double.
