Ingredients
Little olive oil
1 onion finely diced
2-3 cloves garlic, peeled and finely chopped
1 tablespoon dried basil; a handful of fresh chopped basil would be better
1 x 400g tin of chopped or plum tomatoes
Teaspoon-ish of tomato puree
Pinch sea salt
Freshly ground black pepper
Method
Sweat the onion in the olive oil, on a low-medium heat for 10-15 minutes until they start to caramelise.
Add the garlic and fry for a minute or two, then the basil, stir round for a minute.
Add the tinned tomatoes, chop if plum tomatoes. Add another tinful of water, rinsing the tin out; add the tomato puree, salt and pepper.
Allow to simmer for 10-15 minutes, stirring occasionally.
You may want to liquidise a little at the end.
You can add a couple of spoonfuls to homemade pizzas, where it can be used cold straight from the fridge.
Use hot with pasta dishes. |
