Carrot and Walnut Cake
275g plain flour
400g castor sugar
350ml vegetable oil
375g grated carrots
1 tsp salt
3 tsp cinnamon
1 tsp baking powder
2 tsp bicarb of soda
125g chopped walnuts
115g creamed cheese
275g icing sugar
1 tsp vanilla essence
Preheat the oven to 160c / gas 3, and lightly grease a 20cm / 8in cake tin.
Place flour, salt, cinnamon, baking powder and bicarb in a large bowl and stir well until all ingredients are combined.
In a smaller bowl, cream together the eggs and sugar, then slowly add in the vegetable oil and stir until combined.
Mix both bowls of ingredients together a little at a time, stirring until mixed together well.
Add the grated carrot and the walnuts (leave a few walnut pieces aside for decoration / topping later), mix through the mixture until evenly spread throughout the mix.
Pour the mixture into the cake tin and shake a little to level off in need be.
Place in the oven and bake for 45 minutes, you can test my sticking a skewer or thing knife in the centre, when it comes out clean the cake is cooked.
While it's in the oven .. mix the cream cheese, butter, icing sugar, vanilla and the kept walnuts in a bowl and mix until smooth.
Allow the cake to cool, top with the icing and it's ready to serve.
