Fish Pie

Ingredients

450g / 1lb of any white fish, skinned and cuts into serving pieces
1 tblspsn lemon juice
Salt and pepper
40g / 1.5oz margarine or butter
450g / 1lb peeled potatoes

For the Sauce:
25g / 1oz margarine
25g / 1oz salt and pepper mix
300ml / 1/2pt milk
75g / 3oz grated cheese

To garnish:
2 or 3 tomatoes, skinned and sliced.
About 15g / 1/2oz melted margarine

Method

Lay the fish in a greased, shallow dish just to fit in a single layer. Sprinkle on the lemon juice, salt and pepper and dot with 1/2ozof the margarine or butter.

Cover, foil will do, and cook in a moderately hot oven, gas 5, 375f, 190c, for 15 minutes, or until cooked.

Meanwhile, boil the potatoes and mash them with 1/2 tsp salt and 1oz of the margarine.

When the fish is cooked, spoon off any liquid/liquor and add to the milk to make up the quantity to 1/2 pint.

Now make the sauce
Melt the margarine, add the flour and cook for 1 minute.

Add salt and pepper, stir in the liquid, bring to the boil stirring continuously and simmer for 2 minutes.

Beat in the cheese, do not let the sauce boil again. Pour it over the fish.

Pipe or carefully spoon the potato around the edge of the fish.

Arrange tomato down the centre. Brush the potato and tomato with melted margarine.

Place the dish under the grill to tinge the potato golden.
