Simple Sweetcorn Soup

Ingredients
1 tsp oil
1 onion, chopped
1lb sliced potatoes
1 large can sweetcorn
4 cups of vegetable stock
Salt and pepper to season
Method
Lightly fry the onions for around 3 minutes, until the onion is soft and clear - not browning.
Add everything else.
Bring to the boil, and then simmer for 30 minutes until the potato is cooked.
Blend, mash or leave lumpy. Reheat if necessary, but serve hot!smrtovnice
